Sweet Potato Fries

2 large sweet potatoes, peeled
1 1/2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger 


Peel the sweet potatoes then slice them into ¼ inch long slices and ¼ inch wide. In a bowl mix together the oil, salt, cinnamon and ground ginger. Gradually add the sliced potatoes to the bowl until all of them are coated evenly.

Place the potato slices on the high rack and bake at 350°F for 15-20 minutes. Bake for a few minutes longer if you enjoy your fries extra crispy.
