Baked Sweet Potato Chips

2 organic sweet potatoes
2 Tbsp olive oil
1/4 tsp sea salt (optional)


Preheat oven to 400 degrees F.

Rinse and dry the sweet potatoes. Try to slice the potato as thin as you can; if possible use a mandolin. The slices should not be more than a 1/8-inch thick.

Arrange the slices on Spray 2 baking sheets with cooking spray. Lightly coat the slices in olive oil and sprinkle with salt. Lay the slices out in a single layer on a baking sheet; be sure they do not overlap. Sprinkle with salt.

Lay slices out in a single layer on a baking sheet and bake for 20-25 minutes; flipping after 10 minutes. Once chips begin to lightly brown remove from oven; let cool. Store in an airtight container.
