Strawberry Shortcake

2/3 cup sugar
1/4 cup shortening
1 egg
1 teaspoon vanilla extract
1/4 teaspoon salt
1-1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 cup milk
Whipped cream
1-1/2 quarts fresh or frozen strawberries, sliced


Preheat oven to 350° Fahrenheit. In a large bowl, mix together the sugar and shortening. Add in the egg and vanilla; mix well. In a separate bowl combine the salt, flour and baking powder. Gradually add in the dry ingredients and milk to the sugar mixture. Once all ingredients are evenly combined spread mixture into a 9” square baking pan. Bake for 25 minutes; let cool on a wire rack. Serve each slice of cake with whipped cream and strawberries.
