Peanut Butter Fudge


8 ounces unsalted butter, plus more for greasing pan
1 cup smooth peanut butter
1 teaspoon vanilla extract
1 pound powdered sugar 
(Add nuts for a little something extra!)


Combine the butter and peanut butter in a microwave-safe bowl and cover with plastic wrap. Microwave for 2 minutes, stir and return to the microwave for 2 more minutes. 

Add the vanilla and gradually mix in the powdered sugar until mixture becomes difficult to stir.  Spread the mixture onto a greased 8 by 8 inch pan.

Refrigerate until the fudge is completely cooled, roughly 2 hours. Once cooled, cut into 1 inch squares and store in air tight container room temperature or in the fridge up to a week.
