Irish Soda Bread

1/2 cup white sugar
4 cups all-purpose flour (reserve 1 tablespoon)
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
3 cups raisins
1 tablespoon caraway seeds
2 eggs, lightly beaten
1 1/4 cups buttermilk
1 cup sour cream


Preheat oven to 350 degrees F. Grease 9 inch round cake pan and set to side.

In a large mixing bowl combine the flour, sugar, baking soda, baking powder, salt, raisins and caraway seeds. In a separate small bowl, mix together the eggs, sour cream and buttermilk.

Gradually add the liquid mixture into the large bowl with the flour mixture. From here knead the dough about 12 to 14 strokes (be sure not to over knead the dough).

Pour the dough mixture into the cake pan. Make an X on top of the bread with a knife before baking. Dust with reserved flour.

Bake for 65 to 75 minutes. Let bread cool on a wire rack before serving.
