Dijon Herb Chicken Breasts

4 chicken breasts, bone in, skin on (can also replace with drumsticks)
2 tablespoons Dijon mustard
1 tablespoon olive oil
1/2 yellow onion, sliced
1/2 cup low sodium chicken stock
4 sprigs parsley leaves, chopped
2 teaspoons garlic, chopped
1 teaspoon sugar
1 teaspoon red chili flakes
2 teaspoons salt
1 teaspoon black pepper 


In a large bowl mix together all ingredients besides the chicken and onion. Once all ingredients are evenly combined add in the chicken and onion. Place plastic wrap over top of bowl and let chicken marinade for at least 45 minutes.

Once chicken is ready to cook place on the high rack, skin side down.

Cook the chicken at 350°F for 7-10 minutes per side. Once cooked allow chicken to sit 3-5 minutes before eating.
