Creamy Tomato Soup

¼ cup butter or margarine
1 tablespoon finely chopped onion
3 tablespoons flour
2 tablespoons sugar
1 teaspoon salt
Pepper to taste
1 can (16-18oz.) tomato juice
2 cups milk


Combine butter and onion in 2-quart casserole. Microwave 2 minutes on high or until butter is melted.

Blend in flour, sugar, salt and pepper. Gradually stir in tomato juice. Microwave for 6 minutes on high or until hot.

Gradually stir in milk. Microwave for 10 to 12 minutes or until mixture is about to boil stirring every few minutes.

Serve hot garnished with croutons or oyster crackers if desired.
