Orzo Pasta Salad

Ingredients

1 cup orzo pasta
1 small cucumber; peeled
1/4 cup olive oil
1/3 cup coarsely chopped fresh dill
2 tablespoons white wine vinegar
1 small red onion; minced
1/2 lb feta cheese
2 large garlic cloves; minced
1 pint yellow cherry tomatoes 
salt and pepper to taste

Directions

Cook orzo until tender, roughly 8 minutes. Next drain the orzo, transfer to a medium size bowl. Add in the oil, onion, and garlic. Once the pasta has cooled add in the cucumber, cherry tomatoes, dill and vinegar; stir well. Last, add in the salt, pepper, and feta. Gently stir, once evenly combined chill in refrigerator until ready to serve.
