Multicooker Beef Stew

1 Tbsp. butter or oil
2 lbs. beef stew meat, cut into 1” cubes2 medium potatoes, cubed
4 large carrots, peeled & sliced into 1” pieces
2 cloves garlic, minced
2/3 cup onion, chopped
1 celery stalk, chopped
½ tsp. salt and ground pepper
1 tsp oregano
1 cup beef broth
1/4 cup tomato paste
1-1/2 cups peas

Directions

Turn the Multicooker and select “Sear” setting.

Add the butter/oil, garlic and meat and brown for 3-5 minutes, adding salt and pepper to taste.

Add broth and tomato paste and stir.

Put on lid and set exhaust vent to “Sealing”.

Select “Manual” and set the timer for 30 minutes. When cooking is complete, set exhaust valve to “Venting” for quick pressure release;.

Add onion, potatoes, carrots, peas, celery, and oregano. Stir until ingredients are mixed.

Put lid back on with exhaust valve set on “Sealing”.

Cook on manual for 5 minutes.

You can allow a natural pressure release, quick release, or a combination.
